About This Recipe

I don’t think I have ever made a recipe in it's traditional form. 


Growing up with gluten and dairy allergies has meant that I have always had to creatively adjust recipes to suit my needs. 


In many ways this has been a blessing in disguise. It has prevented me from becoming one of those cooks who follows the ingredient list to every last gram.


I have to give my food allergies some credit for my creativity in the kitchen today.

 

Without this necessity to modify recipes I don’t think I would have the drive I do today to create dishes that taste just as good as the ‘real thing’, when they are often missing many essential ingredients.

Today, the way I cook and invent recipes almost always starts by glancing over someone else’s recipe. 


Usually when I am cooking, somewhere in the back of my mind is a recipe I have read weeks ago or a food photo I have seen and wanted to recreate. 


It starts with this thought and then develops into something often completely different. 


It’s such an exciting way to be creative and (usually) ends up with something delicious I can share with others.

Okay, enough about recipe creations and more about these Seven Ingredient Black Bean Brownies! 


When I use alternate ingredients in my recipes, I am always trying to make gluten and dairy free cooking as simple as possible. 


I’m all too often overwhelmed by the multitude of ingredients that are used in gluten free cakes and treats to make them taste ‘normal’.


These Seven Ingredient Black Bean Brownies are the unification of all of the above. 


A simple alternative to a traditional recipe which is not only healthier but, when done right, will be some of the best brownies you have tried. 


These brownies could not be easier: blend everything together in a food processor, pour into a loaf tin and bake. 


Plus, I bet no one you feed these to will be able to guess the secret ingredient!

The black beans simply add a delicious fudgy texture without any flavour compromise.

How To Make This Recipe

7 Ingredient Black Bean Brownies

Ingredients

  • 1/2 cup hazelnuts, ground into course flour (or simply use hazelnut or almond meal)
  • 400g can black beans, drained and rinsed well
  • 3/4 cup cacao powder
  • 1 tbsp tahini
  • 1/2 cup maple syrup (or sweetener of your choice)
  • 2 flax eggs (click to find out more)
  • 1 tsp vanilla extract

Takes ,serves 10 brownies.

Instructions

  1. Preheat oven to 180˚C (350˚F) and grease a small loaf tin
  2. Process hazelnuts into a course flour in a food processor (or skip this step if using meal)
  3. Add all remaining ingredients and process until completely smooth (2-3 minutes)
  4. Spoon out brownie mix into greased loaf tin and bake for 45-50 minutes until an inserted skewer comes out almost clean (it will still be very moist inside)
  5. Remove from the oven and allow to cool in the tin slightly before turning out onto a cooling rack.
  6. Cut into squares and enjoy!
