Crispy Salmon Tacos

These colourful salmon tacos combine satisfying protein, omega-3 fats and fibre-rich vegetables in a fresh, flavour-packed meal. They are simple enough for a weeknight dinner while still feeling like something a little special.

Ingredients:

For the salmon:

• 2 salmon fillets
• 1 tablespoon olive oil
• 1 teaspoon paprika
• ½ teaspoon ground cumin
• Salt and pepper, to taste
• Juice of ½ lime

For the taco base:

• Cassava tortillas or coconut wraps

For the toppings:

• ½ avocado, sliced
• ½ cup red cabbage, thinly sliced
• ½ cup cucumber, sliced
• Fresh coriander/cilantro, roughly chopped
• Lime wedges, to serve

Instructions:

  1. Place the salmon fillets on a plate and drizzle with the olive oil. Sprinkle over the paprika, cumin, salt and pepper, then squeeze over the lime juice and rub the seasonings gently into the salmon.
  2. Heat a frying pan over medium heat. Add the salmon skin-side down, where applicable, and cook for approximately 4 to 5 minutes on each side, or until cooked through and easily flaked with a fork.
  3. While the salmon is cooking, warm the cassava tortillas or coconut wraps in a dry frying pan or oven for 1 to 2 minutes, until soft and pliable.
  4. Prepare the toppings by slicing the avocado, cabbage and cucumber. Roughly chop the coriander and cut the remaining lime into wedges.
  5. Once cooked, flake the salmon into generous pieces. Divide it between the warmed tortillas, then top with avocado, red cabbage, cucumber and coriander.
  6. Finish with a squeeze of fresh lime and serve immediately.
