Mothers Day Pancakes

A simple, protein-rich pancake stack made with FloFit Protein that supports stable energy and feels like a treat, perfect for a nourishing Mother’s Day breakfast or brunch.

Ingredients:

PANCAKES:

  • 1 scoop FloFit Protein (I’ve made these with Double Choc, Salted Caramel latte and Vanilla and honestly cannot pick a favourite, they all work so well)
  • 1 egg
  • 2 tbsp almond flour
  • 1 tbsp ground flaxseed
  • 1/2 tsp baking powder
  • 1/4 cup unsweetened almond milk
  • 1/2 tsp vanilla extract

TOPPINGS:

  • 1/3 cup fresh or frozen blueberries
  • Coconut flakes
  • Dash of maple syrup

Instructions:

  1. In a bowl, whisk together protein powder, egg, almond flour, flaxseed, baking powder, almond milk and vanilla until smooth.
  2. Heat a lightly greased non-stick pan over medium heat.
  3. Pour small amounts of batter into the pan to form mini pancakes. Cook for 2 to 3 minutes until bubbles form, then flip and cook a further 1 to 2 minutes until golden and cooked through.
  4. Stack pancakes on a plate and top with blueberries, coconut flakes and a light drizzle of maple syrup.
  5. Serve warm and enjoy.
