Vanilla Raspberry Breakfast Bake

This recipe makes supporting your hormones feel easy. Prep it the night before, pop it in the oven while you get ready in the morning, and enjoy a warm, nourishing breakfast with minimal effort. With around 26 - 30g of protein per serve, plus fibre-rich raspberries and healthy fats from almond meal, it is designed to support balanced blood sugar levels, steady energy and lasting fullness throughout the morning.

Ingredients:

  • 1 scoop Vanilla FloFit Protein Powder
  • 3 tbsp almond meal
  • 1 tbsp coconut yoghurt
  • 2 tbsp unsweetened almond milk
  • 1 egg
  • ½ tsp vanilla extract
  • ½ tsp baking powder
  • Small handful raspberries (fresh or frozen)
  • Optional Protein Boost: Stir through 2 tbsp hemp seeds or an additional ½ scoop Vanilla FloFit Protein before baking to increase the protein content to over 30g per serve.

** (Serves 1)

Instructions:

  1. Preheat oven to 180°C (350°F) and lightly grease a small ramekin or oven-safe dish.
  2. In a bowl, combine the Vanilla FloFit Protein Powder, almond meal and baking powder.
  3. Add the egg, almond milk, coconut yoghurt and vanilla extract, stirring until a thick batter forms.
  4. Fold through the raspberries and pour the mixture into the prepared ramekin.
  5. Bake for 18–20 minutes, or until golden and set in the centre.
  6. Top with extra coconut yoghurt and a sprinkle of cinnamon or cocoa powder if desired.
  7. Enjoy warm, or prepare ahead and reheat for a quick, nourishing breakfast.
