Salmon Sushi Bowl

This Salmon Sushi Bowl is a simple, nourishing meal packed with protein, healthy fats, and fibre-rich plant foods. The salmon provides omega-3 fats to support a healthy inflammatory response, with important nutrients for hormone, metabolic, and gut health. Using cooled brown rice also adds resistant starch, which helps nourish beneficial gut bacteria and supports the production of short-chain fatty acids (SCFAs).

Ingredients:

Base

  • 1 cup cooked brown rice or cauliflower rice (cooled)

Veggies & Protein

  • ½ avocado, sliced
  • 150-200g cooked salmon (baked, grilled, or pan-seared)
  • ½ cucumber, julienned or thinly sliced
  • ½ cup edamame, shelled and cooked
  • 1 sheet nori, cut into strips or crumbled
  • 1 tbsp sesame seeds
  • Fresh coriander or microgreens (optional)

Dressing

  • 1 tbsp tamari (or low-sodium soy sauce)
  • 1 tsp sesame oil
  • 1 tsp rice vinegar or apple cider vinegar
  • ½ tsp grated fresh ginger

    * Serves 2

Instructions:

  1. Prepare the dressing by whisking together the tamari, sesame oil, vinegar, and grated ginger.
  2. Divide the cooled brown rice or cauliflower rice between two bowls.
  3. Top with avocado, cucumber, edamame, and nori.
  4. Cook the salmon until crispy and cooked through, then flake or slice into pieces.
  5. Add the salmon to the bowls.
  6. Drizzle over the dressing.
  7. Sprinkle with sesame seeds and fresh coriander or microgreens, if using.
  8. Serve immediately and enjoy.
