Green Goddess Bowl

This Green Goddess Bowl is a PCOS/PMOS Plate approved meal that feels just as good as it tastes. It is packed with protein, fiber and healthy fats to support blood sugar balance, hormone health, and satiety while still being fresh, quick, and genuinely delicious.

Ingredients:

Salad Bowl (Serves 1)

  • 1 cup baby spinach or kale
  • 1/2 cup steamed broccoli
  • 1/2 cup steamed zucchini
  • 1/2 avocado, sliced
  • 1 grilled salmon fillet
  • 1/4 cup cooked quinoa

Green Goddess Dressing (Makes 2–3 Servings)

  • 1/4 cup tahini
  • Juice of 1 lemon
  • 1 clove garlic
  • 1/4 cup fresh parsley or basil
  • 2 tbsp olive oil
  • 2 tbsp water (to thin)
  • Salt and pepper to taste
  • 1 tbsp apple cider vinegar

Instructions:

  1. Place the spinach or kale into a serving bowl as the base.
  2. Arrange the broccoli, zucchini, avocado, grilled salmon, and quinoa on top.
  3. In a blender or jar, combine the tahini, lemon juice, garlic, herbs, olive oil, water, apple cider vinegar, salt, and pepper. Blend or shake until smooth and creamy.
  4. Drizzle the desired amount of dressing over the bowl.
  5. Serve fresh and enjoy.
